Clos de Tavannes "Sélection"

Dégustation

  • Tasting notes: In creating this cuvée, we wanted to try to make the best red wine possible. We set aside a barrel from our best terroir: our old vineyard of 1er cru ‘Clos de Tavannes’; this is a one-year-old barrel that brings a subtle woodiness that does not overpower the wine. The result is a full-bodied, concentrated wine with black fruit aromas, powerful on the palate with an elegant tannic structure. Ageing potential: 8-10 years.
  • Production: approximately 300 bottles per year.

  • Area: 0.76 hectares
  • Location: One of the finest terroirs in Santenay, extending from Les Gravières, very close to the Chassagne-Montrachet Premier Cru ‘Morgeot’.

Viticulture

  • Cultivation method: Sustainable, without herbicides or insecticides.
  • Harvesting: Manual

Vinification

  • Vinification: The grapes arrive in crates at the winery where they are sorted and then 100% destemmed. They are then placed in cold concrete vats (below 10°C), where cold pre-fermentation maceration begins and lasts for about a week. When the temperature rises, alcoholic fermentation begins; colour and fruit are extracted through pumping over and gentle punching down. After three weeks, the wine is transferred to barrels.
  • Ageing: A single barrel aged for one year, the wine remains in this barrel for 18 months and is bottled directly without filtration.
