Dégustation

  • Tasting notes: The nose reveals aromas of white flowers and citrus fruits. The palate is delicately oaky, combining notes of fresh fruit and almonds. The minerality of this terroir gives the wine a lovely length. Ageing potential: 6-8 years.
  • Production: approximately 2,400 bottles per year.

  • Location: 2 plots located on the hillside below the Sentier du Clou.
  • Orientation: south
  • Grape variety: Chardonnay
  • Age: 1/3 old vines (70 years old) and 2/3 younger vines (35 years old)
  • Soil: Clay-limestone

Viticulture

  • Cultivation method: sustainable, without herbicides or insecticides
  • Harvesting: manual

Vinification

  • Vinification: The grapes are pressed using a pneumatic press, and the lightly settled juice is then placed in barrels where alcoholic and malolactic fermentation take place naturally.
  • Ageing: 100% in oak barrels, 20% of new, for 11 months; then blended in stainless steel vats and bottled after 15 months.
