Dégustation

  • Tasting notes: The most complete wine in our St-Aubin range. On the nose, the minerality of the terroir blends with notes of white flowers. The palate is long and complex, marked by aromas of fresh fruit and citrus. Ageing potential: 8-10 years
  • Production: approximately 6,000 bottles per year

Terroir

  • Area: 0.85 hectares
  • Location: Beautiful terroir, ideally located close to the Puligny-Montrachet Premier Crus ‘Garenne’ and ‘Champs Gains’.
  • Orientation: south-west
  • Grape variety: Chardonnay
  • Age: 1/3 old vines (80 years old) and 2/3 younger vines (35 years old)
  • Soil: Clay-limestone

Viticulture

  • Cultivation method: sustainable, without herbicides or insecticides
  • Harvesting: manual

Vinification

  • Vinification: The grapes are pressed using a pneumatic press, and the lightly settled juice is then placed in barrels where alcoholic and malolactic fermentation take place naturally.
  • Ageing: 100% in barrels, 20% of new, for 11 months, then blended in stainless steel vats and bottled after 15 months.
